Treat mum to a pretty-in-pink, mouth-watering treat — pink lemonade scones.

This recipe idea for Mother’s Day is unlike any other. Scones are an all-time favourite for us. Although a classic scone is traditional, we opted for the lemonade scone, which are quicker and much easier to make.

Scones are an essential baked good for high tea’s world wide. So, it is safe to safe if you are planning a high tea at home for Mother’s Day, scones are probably going to be in attendance.

Store-bought scones are delish, but I think you will agree - any mum receiving this pretty as a picture treat is sure to be impressed.

Ingredients
  • 300ml of thickened cream
  • 2 tablespoons of icing sugar
  • 250 grams of strawberries
  • 3 cups of self-raising flour
  • 3/4 cup of lemonade
  • Pink food colouring
  • 300 ml of pouring cream
  • Jam and fresh berries to serve

Preheat the oven to 200C fan forced and line a baking tray with baking paper.

Sift flour into a large bowl and add pouring cream.

In a jug, combine the lemonade and food dye.

Add mix to the flour and cream.

Stir the mixture until it is almost combined.

Hot tip; be very gently with the mixture. Over mixing the dough is a common mistake causing the scones to be tough and chewy.

Place the mixture onto a lightly floured surface and knead to form a dough.

For a rustic look cut dough into 12 even shares. 

Alternatively, using a circular cutter*, cut out rounds until all dough is used.

Place cut dough evenly on the pre-lined baking tray.

Cook for 20 minutes or until lightly golden.

Allow scones to cool on a wire rack with a clean tea towel placed on top of them.

Whilst scones are cooling, beat the thickened cream and icing sugar with an electric mixer to form soft peaks.

Cut strawberries into quarters.

To serve, cut scones in half and fill with the freshly whipped cream, jam and strawberries.

Garnish with additional seasonal berries and dust with icing sugar.

Notes

Scone dough doesn’t like to be handled much. Keep it cool by refrigerating your lemonade before use.

Using a stone-based (such as marble) chopping board and or rolling pin to roll and cut your dough will also keep the temperature down during prep.

For a perfectly petite serving size, dust the rim of a champagne glass in flour and use this to cut out your scones. Or make fun shapes using cookie cutters.

For the perfect high tea moment, add some edible flowers to your plate and serve with a cold glass of champagne or prosecco.
